Two eggs, 1/2 avocado, sharp cheddar, and salsa. Happy Daylight Saving Time.

Breakfast.

Decided to go all-out this morning with an everything bagel toasted with turkey, cheddar cheese, a couple slices of apple, and a little Greek yogurt. I love mixing savory and sweet.

And coffee. With lots of half and half :D

Sausage and Kale Strata

If it isn’t obvious, I’ve been a bit uninspired lately. There is something wrong with my knee which is preventing me from running, I still haven’t found a job, I spend most of my days alone in my apartment, and I’m having a hard time making myself get up, get out, and stay motivated. But that’s another story for another time.

Last night, however, my BFF Shelley was in town visiting for Halloween, so I took my crabby pants off and put my party pants on. Well, tights, actually. Not pants. I put on my best Lady Gaga (I’m still waiting for photos to surface on Facebook…) and donned my pokerface all night while we hopped around downtown Grand Rapids. Not normally my thing, but I had a super fun time. And I accidentally drank way more than I thought… So I’ve been pretty useless all day. Oops!

Around 5:00 I started to think about dinner and how delicious breakfast for dinner sounded. I wanted to try something new, so I did some Googling and discovered Strata - basically a casserole made with day-old bread, egg, cheese, and whatever kinds of meats and vegetables you want.

Scrambled eggs (two yolks, one white, with a splash of skim milk), spinach, two slices of deli ham, and a couple spoonfuls of salsa. Half avocado on the side. Coffee with half and half.
